WHITE JASMIN TEA
This tea enjoys great prestige today and is often considered the most precious white tea in the world, both because of the care taken during the harvest and the finesse of its flavors. The harvest is done entirely by hand two days a year, at the Tianhu tea farm in Fujian province at an altitude of 500 m, and only the youngest buds are chosen.
The jasmine harvest takes place at the end of summer. These flowers have the particularity of opening in the evening and it is therefore at the time when they begin to smell that we superimpose a bed of flowers under a bamboo bed of tea leaves for 7 days. Throughout the night, our farmers make sure to mix properly leaves & flowers to ensure the most complete absorption of the perfume. They will be separated at dawn, the jasmine flower bringing nothing to the infusion except bitterness.
